At this event Suzy Chin, our Vice President, will demonstrate and discuss various storage methods, locations, and conditions for overwintering Dahlia tubers.
This is the part after you dig them out. Follow the instructions below to know when to dig them up. The demonstration will cover Step 3 in the instructions below.

Due to the unpredictable frost dates, you’ll need to dig up the tubers. Here’s how you can do it:
Step 1: Determine the hard FROST date in Chappaqua.
A likelihood of frost increases throughout October: There is a 30% chance of a 32°F frost by October 12. There is an 80% chance of a 32°F frost by October 29.
NOTE: The difference between Frost and Freeze: Frost is temperatures below 36C and Freeze is temperatures below 32C. Freezing is more damaging. (Frost 36-32, Freeze 32 and under)
Step 2: To cure the tubers
Timing: After the first hard frost, cut the stems to 6 inches above the ground. Cutting back signals the tubers below the ground to set “eyes” (sprouts) on the tubers.
WAIT: a week. Leave the tuber clumps in the ground, undisturbed. Keeping them in the ground signals the tubers to cure and toughen up, which helps them store better over the winter. After a week, carefully dig up the tubers.
Label/tag: Dahlia variety name.
Clean: Gently brush off excess soil from the tubers. Avoid washing them to prevent excess moisture.
Dry: Let the tubers dry completely in a cool, dark, and well-ventilated area for several days. The key is for them to be "dry to the touch," but not so long that they shrivel. MAKE SURE THEY DO NOT FREEZE DURING THIS TIME!!!
Prep for storage: Using loppers or heavy clippers, cut off the “stem handle” near the base of the clump, leaving about 1-2 inches. Do NOT cut too low or you will cut off the “eyes”!
Now you are ready to store your tubers for the winter.
